How to make Brazil nut parmesan
Quick and easy dairy free parmesan style cheese
This is such a simple recipe yet it’s really effective. It’s full of flavour yet won’t over dominate the majority of foods that it is added to. It will brighten up a dreary bowl of spaghetti (courgette or otherwise), add some lustre to your salad and is an interesting pairing to your pizza. It will also add a salty depth of flavour to minestrone. The secret of success in this recipe is to use a fine microplane grater to grate the Brazil nuts. The end result has the flavour and consistency of a finely grated Parmesan but without any of the dairy. The nutritional yeast and sea salt provides the seasoning.
Once made, this will keep in a jam jar in the fridge for up to 5 days.
Brazil nut parmesan
INGREDIENTS
45g (1/3 cup) brazil nuts, finely grated
2 tablespoons nutritional yeast, finely crushed
1 teaspoon sea salt
METHOD
Using a microplane grater, finely grate the brazil nuts into a bowl.
Add the crushed nutritional yeast and the sea salt.
Combine carefully.
