Chocolate Almond Butter Bites
a quick and easy gluten free sweet treat
There are some days when you don’t have enough energy to lift a finger or you have so much to do that you don’t have much time but yearn for a chocolatey moreish snack. These chocolate almond butter bites are a firm favorite in our house. Easy to knock up in minutes and you don’t have to be full of energy at the end of a long day in order to make them.

INGREDIENTS
Makes 20 bites
¾ cup almond butter (or peanut or any seed butter is good),
½ cup cacao powder,
¼ teaspoon coarse sea salt
1 cup Medjool dates, pitted,
METHOD
In a food processor using the S blade, process together the almond butter, pitted dates and coarse sea salt until well combined into a paste.
Then add the cacao powder and whizz until the mixture forms a stiff dough.
Form into bite size chunks, roll and place on a baking sheet. Chill the bites for 10-20 minutes to firm up a little.
These will last for 2-3 months in an airtight container in the refrigerator.
