Refresh and reboot
I am so delighted to be featured in the April 2018 edition of Prima magazine. A lovely big thank you and appreciation to Lynn for asking me to do it. In the article, they've even called me Prima's favourite plant-based chef. There's a happy dance right now going on in the Deliciously Raw household.
The article is about rebooting your health and vitality by eating a day of raw plant-based food every week. It's on page 70 if you want to take a look.
The article features some lovely super easy recipes for you to try; a green tropical smoothie, a miso soup with lettuce, rocket and broccolini flowers and a Moroccan cauliflower couscous with a citrus tahini dressing. If you have any room you can follow this with a simple almond butter and banana ice cream – add a few chocolate chunks and walnuts and you have a version of a popular Jen and Berry's ice cream. All you need is a small personal blender for the recipes and a food processor for the cauliflower rice.
If you’ve struggled with a raw cauliflower rice in the past, here’s the secret of making a decent raw cauliflower rice here.
Sadly, they didn't have room to use the photos I supplied which were taken by the talented Dawn Langley - so I'm including them for you to enjoy here.
If you'd like to know what the lettuce and rocket soup looks like once it's completed, it's here. I've used rocket flowers in this version which are a little bit spicy and lend a beautiful finish to the bowl.
Here's the Moroccan cauliflower couscous with tahini dressing photo which didn't make it to the final page.
It’s not the first time I’ve written recipes for Prima magazine. You may have seen the super-easy chocolate crunch caramels in the Christmas 2016 edition, or the little black dress anti-bloat diet a couple of years ago.
